The squash softens and caramelises while the chickpeas crisp up, soaking in the harissa spice. Sweet, smoky, and a little crunchy all at once.

Then the couscous land: soft pearls of goodness with mint, lemon and a spoonful of cooling yoghurt stirred through. It’s fresh, fragrant, and cuts clean through the spice.
