These chicken thighs go in hot with a chilli honey marinade. As they cook, the glaze caramelises and turns crisp, wrapping the meat in sticky, succulent amber. The skinless thighs brown at the edges, stay soft and juicy inside, and smell like someone’s been bbq’ing.

The butternut and carrots roast until their edges caramelise and the garlic butter melts through, the herbs clinging to the rough, golden edges.
